GLUTEN-FREE DUNKING COOKIES WITH LEMON AROMA
The classic dunking cookies in a gluten-free version, easy to make in the oven or air fryer!
Since I’m expecting baby number 4, my cravings have tripled, but I have to try to keep them in check because of the illness, as soon as I slip up, the pains return.
But solutions are always found, which is why I decided to try these dunking cookies in the morning with a nice cup of tea: try them, you’ll love them as much as I do!!

Ingredients
- 2 eggs
- 2.5 cups gluten-free bread flour (for cakes)
- 1/2 cup sugar
- 1/2 cup vegetable oil
- Half packet gluten-free baking powder
- 1 lemon

Steps
If you see that the flour is not enough, you can add a tablespoon at a time until you get the desired effect. This is very important because gluten-free flours can vary depending on the moisture they can retain.
In a bowl, pour the eggs with the sugar, beating well with the whisk, at this point add all the ingredients little by little until you get a soft but pliable dough.
Let the dough rest for about 30 minutes under a cloth.
At this point, divide the dough into three balls and roll to form loaves. Then place on parchment paper and cook:
– in the oven at 320°F (160°C) for 15 minutes;
– in the air fryer at 330°F (165°C) for 10 minutes.
Once cooked, take them out, cut into pieces and then again in the oven or air fryer for 2/3 minutes.
A nice dusting of powdered sugar, but be sure, only once they are well cooled.
