GLUTEN-FREE SWEET PEACHES
The preparation of sweet peaches in a gluten-free version is much simpler than you might think, ideal to serve for afternoon tea.
My son Filippo is in love with sweet peaches, every time we are at the supermarket he asks me to buy them, so I decided to make them at home, but in a gluten-free version so that I can enjoy them in all their splendor too.
For convenience, I used my food processor, but you can do all the steps by hand.

Ingredients
- 1 egg
- 7 tbsp sugar
- 1 3/4 cups rice flour
- 1/2 cup butter
- 1 tsp vanilla essence
- 1 tsp baking soda
- 1 custard
- 2 tbsp alchermes

Steps
In the bowl of the processor with the help of the integrated scale, pour all the ingredients to make the shortcrust, placing the kneading paddle over the blades, knead at speed 4 for 5/6 minutes.
Once done, pour onto a work surface and finish kneading by hand until forming a ball.
Let it rest in the refrigerator for at least an hour.
Reposition the jug on the processor and start the self-cleaning with a few drops of soap, activate for 10 minutes.
Once finished, clean with a sponge and dry.

Once ready, pour into a bowl with cling film on contact and let cool.
Activate the pre-clean as above for at least 20 minutes.
While the custard cooks, take the shortcrust dough that has rested in the refrigerator, take a small piece of 0.5/0.7 oz, round it with your palms and place on a baking tray.
Bake at 320°F with fan for about 12/15 minutes, it depends a lot on the power of your oven.
Once you have everything ready, proceed as follows: with a pointed knife lightly hollow out the balls, pour a teaspoon of custard inside and close with another hollowed-out cookie.
Dip a second in alchermes and roll in a bit of granulated sugar.
Let them rest in the refrigerator for an hour.
