LOW-TEMPERATURE COOKED VEAL SLICES WITH PEAS AND PUMPKIN
A meat main course, easy and quick to make, cooked at low temperature to enhance its flavors.
Often in the kitchen, especially with main courses, we find ourselves in difficulty because we have little time and especially little desire to stay at the stove, especially after a long day at work, you come home and have to tidy up the house and kids.
Here I come to your aid with these simple slices, distinguished by the fact that I cooked the meat at a low temperature, added pumpkin which gives an extra flavor to the dish, and peas, which we all have in the pantry or freezer 😉

Ingredients
- 1 lbs veal slices
- 3/4 cup pumpkin (cleaned)
- cup peas
- 1 onion (or garlic)
- 1 tbsp olive oil
- 1 tsp salt

Steps
First, clean the pumpkin, cut away the skin with a knife, and dice it.
Now onto the onion: remove the skin and cut into rings.
Take a pan, pour in the onion along with the oil and let it just brown, also add the pumpkin and cover everything with water.
Let it cook for 15 minutes.
In the vacuum bag, add the meat and herbs of choice (you can use thyme, sage, rosemary, etc.), seal the bag vacuum.
Prepare the water: with the help of a tall pot, secure the sous vide cooker firmly, pour water up to the indicated level, and then select the cooking and time according to how you want to enjoy it.After the time is up, open the bag and pour into the pan with the pumpkin, it should cook for 4/5 minutes per side.
Finally, add the peas (I conveniently use pre-cooked canned ones).
Add salt.

Storage and Tips
They can be stored in an airtight container in the refrigerator.
I do not recommend freezing.
Please, cook the meat lightly otherwise it tends to harden easily.
