Ingredients

  • 2 eggs
  • 50 ml plant-based milk
  • 3 1/2 tbsp vegetable oil (or olive oil)
  • 2 tbsp honey
  • 1 lemon
  • 1 peach (pitted)
  • 1 apricot (pitted)
  • 2 1/2 cups all-purpose flour
  • 1 packet baking powder
  • 3 peaches
  • 4 apricots

Steps

  • In the blender, gradually pour all the ingredients: eggs, sugar, milk; cut the fruit into pieces removing the pit, oil, flour and finally the sifted baking powder.

    Blend the mixture for a few minutes and it’s ready.

  • Once done, pour into a previously greased cake tin and garnish with slices of fresh fruit that you have cleaned, pitted and sliced.

    Preheat the oven to 350°F and bake for about forty minutes.
