QUICK SALMON WITH ARUGULA, CHERRY TOMATOES, AND PARMESAN

Ingredients

  • 1 package smoked salmon
  • Half package cherry tomatoes
  • 1 package arugula
  • 1 package Parmigiano Reggiano DOP
  • salt
  • 3 tablespoons olive oil

Steps

It is a very quick recipe, but it is advisable to first soak and wash the cherry tomatoes and arugula and dry them.

  • Open the smoked salmon slices and place them in the pan, then add the arugula and cherry tomatoes cut into 2 or 4 pieces, depending on your taste.

    I opted to buy pre-shaved parmesan, easy and quick, and I placed it on the fish.

    At this point, salt to taste and add olive oil.

    Based on your personal taste, you can add a bit of lemon juice or balsamic vinegar.

    You can serve immediately or prepare it a few hours in advance and let it rest in the refrigerator.
