SFINCI FRITTELLE OR ZEPPOLE DI SAN MARTINO
The recipe for sfinci, fritters, or Zeppole of San Martino, a typical dessert of this period that has several names, depending on the country you visit.
Every year I say that I absolutely must try to make this San Martino dessert and finally here I am: I prepare them with sourdough but I’ll give you the version with yeast!
Let’s see how I made them.

Ingredients
- 3/4 cup semolina flour
- 1 2/3 cups Manitoba flour
- 1 egg
- 3/4 cup milk
- orange zest (or lemon)
- 4 1/4 cups sunflower oil (for frying)
- powdered sugar
- 3/4 cup milk
- 1 3/4 tsp dried yeast (10 g fresh yeast)

Steps
For those using sourdough, refresh it the night before, and once it has grown to 1.5 times its size, put it straight in the fridge. In the morning, take it out and let it acclimate for an hour before adding it to our doughs.
For those using dried yeast, subtract 50 g of water from the TOTAL described and then proceed as described on the package.
In a bowl, mix the sourdough with the milk and mix with a spoon until it dissolves; then add the flour, the egg, and the orange zest.
Do the same for the yeast, dissolve in the milk and add the ingredients.
The dough will be slightly sticky, which is normal.
Let it rest until it doubles: for sourdough, it will take about 6 hours (if it is active and strong).
With yeast, about 4 hours.
Once risen, give it a stir to deflate the dough.
In a deep pot, pour the oil for frying, and once it reaches temperature, proceed as follows:
Scoop a bit of dough with a spoon and drop it into the hot oil with the help of another spoon, cook for a few minutes, and stir.
Drain on absorbent paper and dust with plenty of powdered sugar.
