SUPER-QUICK SALMON IN PASTRY: EASY RECIPE WITH READY-MADE PUFF PASTRY
A quick and very easy fish main course to make, with ingredients we already have at home, such as supermarket rolled puff pastry.
Christmas is approaching and for many of us, time in the kitchen is really scarce, but the desire to make delicious dishes is strong: don’t worry, this recipe will save your dinner.
You can use ready-made puff pastry from the supermarket fridge, or make it yourself: I stock up a lot in the freezer, because yes, you can FREEZE puff pastry easily ->

Moreover, if you don’t have fresh salmon, don’t worry, frozen fillet will do just fine: the recipe is ready.
Now I’ll share a trick to prevent the pastry from becoming soggy during baking: sprinkle the salmon well with breadcrumbs before wrapping it in the pastry, and you’re done!

Ingredients
- 2 rolls shortcrust pastry
- 2 fillets salmon
- salt
- 2 tablespoons breadcrumbs
- 2 cloves garlic
- 10 peeled cherry tomatoes
- aromatic herbs
- 2 tablespoons olive oil

Steps
If using frozen salmon, you will need to thaw it first, otherwise it will release too much water.
First, rinse the salmon well under water to remove any residue, and if you want (though it’s optional), you can blanch it for a few minutes in boiling water to remove the dark skin.
At this point, on a plate, pour the breadcrumbs, mixed herbs, and a good pinch of salt, and coat the fish well.
Once coated, open a roll of puff pastry: round or square doesn’t matter, place the fish on it and seal the edges well. Cut off the excess pastry with a kitchen cutter.

Score the pastry with a knife and place the salmon in a large baking tray. Add a drizzle of olive oil, garlic, and cherry tomatoes inside.
Preheat the oven to 356°F (180°C) and place the tray once it reaches temperature: bake for about 25/30 minutes. The crust will turn golden and crispy.
