The recipe to make a paradise cake, a very soft dessert, full of powdered sugar that makes both adults and children happy with every bite.

Paradise cake is one of the desserts my children love the most, they adore getting their faces messy with powdered sugar and the hint of lemon makes everything better.

The other day I was unsure about which dessert to make for everyday breakfast or snack, and while browsing online I found an ad for this recipe: I had to make it.

My cake turned out very tall because I have a small 9-inch pan, while the doses are perfectly fine for a 10- or 11-inch pan.

  • 4 eggs
  • 3.5 oz butter
  • 1.2 cups all-purpose flour
  • 1 cup potato starch
  • 1 lemon
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • 1 packet baking powder
  • 3.5 oz vanilla powdered sugar

Steps

  • First, in a bowl, add the butter in pieces, grate the lemon zest, and add the vanilla: beat with a mixer until a fluffy cream is formed and set aside.

  • In a bowl, pour the flour, sugar, and potato starch, mix, and add the butter, beating well together, then pour in the milk.

  • Add the eggs one at a time, and finally the baking powder.

  • Preheat the oven to 350 degrees Fahrenheit static, 340 fan mode.

    Pour the batter into a greased springform pan and level the surface well.

  • Bake for about 40 minutes, after the time do the toothpick test:

    insert a toothpick into the cake, if it comes out clean, the cake is ready.

  • Let it cool down well.

    Once cold, sprinkle the surface with vanilla powdered sugar (or plain if you prefer).
