Abruzzese Pan-Rozzo!
A traditional sweet from the Abruzzo region made during the holiday season with almonds.

Ingredients for Abruzzese Pan-Rozzo:
- 4 eggs
- 1 cup cups semolina
- 2/3 cup cups sugar
- 3.5 oz oz almonds
- 2/3 oz oz amaretto di saronno (liqueur)
- lemon zest
- 1/3 cup cups butter
- 7 oz oz dark chocolate
Steps
The preparation of the Abruzzese Pan-Rozzo is quite simple and quick, watch the video HERE.
First, separate the yolks and whites and start whipping the whites until stiff peaks form. Add the yolks, lemon zest, sugar and whisk. We need to achieve a light creamy consistency.
Add the melted butter, chopped almonds, and mix. Pour in the liqueur, semolina, and mix. Gently fold in the egg whites a little at a time with delicate movements from top to bottom.
Grease the mold and pour the mixture. Bake at 320°F for about 1 hour.
Once cooked and cooled, place it on a rack and glaze it with dark chocolate melted in a double boiler or microwave. Let the chocolate harden for about an hour.
