A simple and quick recipe to prepare that we can enjoy as a appetizer or side dish to accompany our main courses of all kinds! The gratinated eggplants are made in a vegan version to please everyone, but if you want a more indulgent version you can add also the parmesan mixed with breadcrumbs! I chose to cook them in the air fryer to optimize time but if you don’t have one, you can cook them in the classic oven.

  • garlic powder

  • First, wash the eggplants thoroughly then cut them into slices not too thin. Take one slice at a time and make small cuts with a knife. In a bowl, put some breadcrumbs, salt, garlic powder, parsley

  • mix. Add the washed and chopped cherry tomatoes and mix. Arrange the eggplant slices in the air fryer basket and salt them.

  • Put a little of the prepared mix on top of each one. Finally, add a drizzle of oil on top and cook in the air fryer at 390°F for about 15 minutes.
