Almond Cantucci in Air Fryer
Typical cookies for this time of year that are usually offered at the end of a meal accompanied by Vin Santo. In past years I made them in the oven but this year I tried to make them in the air fryer and used whole cane sugar, which is a good alternative if you have people with diabetes or who need to watch their sugar intake. A very simple recipe to prepare!

Ingredients for Almond Cantucci in Air Fryer:
- 1 egg
- 1 1/3 cups flour
- 1/3 cup whole cane sugar
- 1/2 cup almonds
- 2 tbsps butter
- 1 tsp baking ammonia
- salt
Steps
Preparing the Almond Cantucci in Air Fryer is very simple and quick, watch the video HERE.
In a bowl, mix the flour, sugar, and leavening agent (ammonia). Add the egg, butter, and mix and knead until you get a homogeneous mixture.
Add the almonds and mix. Divide the resulting dough in half and form two logs. Place them into the air fryer basket and cook at 356°F for about 20 minutes.
Then cut them slightly diagonally once they have cooled slightly (they should not cool completely and should not be too hot). Turn them upside down and cook for another 10 minutes at 356°F.
