Apple and Cream Cake
A delicious cake made with a delightful filling of apples and cream and a sponge cake-like base. This is one of the best apple cakes I have ever made! A great cake to enjoy any time of the day!

Ingredients:
9-inch mold
- 3 eggs
- 3/4 cup sugar
- 1 1/3 cups flour
- 2 tsp baking powder
- Half lemon (Juice)
- 2 eggs
- 2 cups milk
- 1/3 cup cornstarch

Steps
To prepare the apple and cream cake watch the video HERE.
Separate the egg whites from the yolks and add the sugar equally. Whisk the egg whites first and then start whisking the yolks. Add the lemon juice.
Continue whisking until you obtain a light creamy mixture. Combine the two mixtures gently.
Add the sifted baking powder and flour gradually. Incorporate with gentle movements from top to bottom. Pour the mixture into the mold and level.
Bake at 350°F for about 25 min.
Cream preparation:
In a saucepan, place the eggs, sugar, and cornstarch.
Add some vanilla and mix. Add the milk while stirring and the lemon peel. Cook for a few minutes, stirring occasionally. Once thickened, remove the peel.
Turn off the heat, cover with plastic wrap, and let cool.
Apple preparation:
In a saucepan, place the apple pieces, sugar, and cook for about 10 min, stirring occasionally.
Turn off and let cool. Once cooled, combine the apples with the cream and mix.
Assembly:
Take the cooled base and cut it in half. Place the first piece (for a more precise result, you can use an adjustable rectangular mold and the acetate sheet).
Slightly soak with a bit of water with sugar and flavors to taste. Add the prepared cream, level, then place the other piece of base on top.
Press lightly then soak. Place in the fridge for a few hours.
