Apple Swirl Dove Cake
From a swirl roll lover like me, of course, a dove cake made this way couldn’t be missing. It’s not the recipe of the classic dove cake but a dove made of brioche and apples. A delicious, scenic recipe perfect for the Easter period. A dessert I chose to make in a vegan version without butter or eggs and using plant-based milk, but you can easily replace it with cow’s milk. For the filling, I made a mixture of apples, sugar, and cinnamon!

Ingredients for the Apple Swirl Dove Cake:
- 5 apples
- ground cinnamon
- 4 tablespoons sugar
- 2 1/2 cups flour (Half Manitoba, half all-purpose)
- 1/4 cup sugar
- 2 teaspoons fresh yeast
- 1/2 cup milk (Plant-based)
- 3 1/2 tablespoons vegetable oil

Filling Preparation:
First, we clean the apples and then grate them. We put them in a saucepan on the stove and add the sugar.
Add cinnamon to taste. Cook for about 10 minutes on high heat, stirring occasionally. Let cool.
Dough Preparation:
Put the flours
combine the yeast with some sugar and a little milk and dissolve it. Add it in. Add the remaining milk, the remaining sugar,
Add the oil and knead until you get a smooth, non-sticky dough. Cover and let rise for about 1 hour and 30 minutes.
After the rising time, roll out forming a rectangle. Place the cooled apples on top.
leave a bit of empty edge on one side. Roll up and then cut into slices to obtain the swirl rolls (10/12). Place them in a dove mold.
Fit them well together. Sprinkle some cinnamon on top and let rise for another 30 minutes. Then bake at 355°F for about 40 minutes.
