Apricot and Amaretti Semifreddo
Another summer dessert, fresh, very easy to prepare, made with apricots and amaretti. A quick recipe that we can prepare well in advance and store in the freezer until needed. The semifreddo is perfect as a dessert to conclude a meal, as a snack, or at any time of the day we feel like it. If you prefer peaches instead of apricots, you can use them too.

Ingredients for the Apricot and Amaretti Semifreddo:
- 9 oz apricots
- 1 cup whipping cream
- 3/4 cup sugar
- 3.5 oz amaretti
- 9 oz mascarpone
- almond flavoring
Steps
The preparation of apricot and amaretti semifreddo is very simple and quick, watch the video HERE.
In a saucepan, place the chopped apricots, sugar, and cook for about 10 minutes, stirring occasionally. Turn off the heat and let it cool.
Meanwhile, put the mascarpone, cream, a bit of almond flavoring, and whip with electric beaters. Add the previously prepared chilled apricot mixture.
Mix well. Place the amaretti on the bottom of a silicone mold, otherwise, you need to line it with plastic wrap to facilitate removal after freezing. Add the prepared mixture on top and level it. Cover and place in the freezer for a few hours.
