Apricot Yule Log
A seasonal dessert made with fresh apricots, cream, mascarpone, and ladyfingers! In summer, we crave fresh things, which is why I propose this fresh and summery yule log, very simple and quick to make and excellent to enjoy in these scorching days!

Ingredients for the Apricot Yule Log:
- 9 oz apricots
- 3/4 cup sugar
- 3/4 cup heavy cream
- 3.5 oz mascarpone
- 7 oz ladyfingers
- 3/4 cup milk

In a saucepan, put the sliced apricots, the sugar, and cook them for about 10 minutes, stirring occasionally. Turn off the heat and let them cool.
In a bowl, put the mascarpone, the cream and whip them. Add the cooled apricot mixture and mix. Cover the work surface with cling film.
Soak the ladyfingers in the milk and arrange them forming three equal rows. Put the obtained cream on top and spread it. Close the log with the help of cling film.
You can put it directly in the freezer or place it in a loaf pan and then in the freezer for a few hours. Before serving, decorate it with apricots, whipped cream, or anything else you like.
