Asparagus and Tomato Risotto
A simple and very tasty recipe made with rice, asparagus, and tomato, a delightful combination that will conquer your taste buds. A vegan main dish, so if you have vegan or intolerant friends over and don’t know what to prepare, this risotto can be a great idea! Ingredients for the Asparagus and Tomato Risotto:
- 3/4 cup rice
- Half onion
- garlic
- 7 oz asparagus
- 2 tomatoes
- extra virgin olive oil
- salt
- 1 1/4 cup vegetable broth
- 3 1/2 tbsp white wine
Steps

In a pan, place the chopped onion, garlic, a bit of oil, and sauté. Add the rinsed and drained rice
Toast it for a few minutes. Add the white wine and let it evaporate. Begin to gradually add the vegetable broth. Add the chopped tomatoes
continue cooking by adding vegetable broth as needed. Meanwhile, in a small pot, put some water, vinegar, and salt and add the cleaned and washed asparagus (mine are wild). Drain them
halfway through cooking, add them to the rice and continue cooking.
