A perfect salad for the spring season made with asparagus, potatoes, feta, and prosciutto. A fresh dish perfect for lunch/dinner. You can prepare it the day before, so you have the meal ready! If you work in an office, you can bring it to work because it is a cold dish! I used wild asparagus because I personally like them better and find them much tastier, but if you are not as “lucky” as I am to have them, the ones from the grocer or supermarket are perfectly fine!

Ingredients for the Asparagus Salad:

  • 1 lbs potatoes (Boiled)
  • 7 oz asparagus
  • 7 oz feta
  • 3.5 oz prosciutto
  • extra virgin olive oil

Steps

The preparation of the asparagus salad is very simple and quick, watch the video HERE.

  • First, we clean the asparagus by removing the hard part of the root and cut them into desired-sized pieces. We wash them thoroughly then boil them. Once ready, we drain them and let them cool. In the meantime, we boil the potatoes and then cut them into cubes.

  • We mix them with the feta, also cut into cubes. We add the cooked asparagus, prosciutto, a bit of oil, and other spices to taste. We mix well.

  • Enjoy your meal!
