Baked Strawberry Cheesecake
This is definitely the best strawberry cheesecake I’ve made in recent years. Usually, I prefer no-bake cheesecakes, but this version is something EXTRAORDINARY!!! If you love strawberries and are looking for a delicious dessert that will leave everyone speechless, try this cheesecake! It’s perfect for any time of the day, from dessert after a meal to an afternoon snack!

Ingredients for the baked strawberry cheesecake:
- 8.8 oz cookies
- 1/2 cup butter
- 3 eggs
- 3/4 cup sugar
- 1 cup ricotta
- 1 cup plain yogurt
- 3.5 oz cream cheese
- 1/2 cup flour
- vanilla
- lemon zest
- 8.8 oz strawberries
- 1/3 cup sugar
- Half lemon (Juice)

Base preparation:
First, mix the melted butter with the crushed cookies. Place the mixture into the baking pan lined with parchment paper and spread it over the entire surface, including the edges. Press down firmly and refrigerate while you prepare the cream.
Cream preparation:
First, separate the egg yolks from the egg whites. Add sugar equally. Beat the egg whites until stiff peaks form. Add a bit of lemon zest to the yolks,
vanilla, and beat. Add the ricotta, cream cheese, yogurt, flour and mix well.
Gradually fold in the beaten egg whites. Pour the resulting mixture over the cookie base and bake at 338°F for about 50/60 minutes.
For the topping:
Clean the strawberries
add the sugar, lemon juice and cook for about 10 minutes, stirring occasionally. Let cool.
Once the cheesecake is baked and well cooled, remove it from the mold and top with the strawberry mixture.
