Banana and Chocolate Mimosa Cake 🍌🍫

Ingredients for the banana and white chocolate mimosa cake:
- 5 eggs
- 1 cup sugar
- 3/4 cup flour
- 1/3 cup unsweetened cocoa powder
- Half packet baking powder
- 1 cup milk
- 3 tbsps cornstarch
- 3/4 cup white chocolate
- 3 bananas
- 1/2 cup sugar
- Half lemon (Juice)
- 1 cup whipped cream
Steps
The preparation of the banana and white chocolate mimosa cake is very simple, watch the video HERE.
Base preparation:
Beat the eggs with the sugar. Add the cornstarch, baking powder, cocoa and mix. Add the flour.
Pour the mixture into the mold. Bake at 350°F for about 40/50 min.
White chocolate cream preparation:
In a small pot, put the cornstarch, milk and mix well to avoid lumps. Heat until it thickens, stirring.
Once thickened, add the chocolate and mix well. Transfer to a bowl, cover with film, and let cool.
Banana cream preparation:
Slice the bananas,
add the sugar, lemon juice, and cook for about 10 min, stirring occasionally. Let the mixture cool.
Once the sponge cake is baked and fully cooled, remove the crust and cut into 3 equal discs.
Cut one disc into cubes to save for decoration. Mix the cooled banana mixture with whipped cream.
Assembly:
Place the first sponge cake disc, moisten it,
Add a layer of chocolate cream and a layer of banana cream. Place the second disc on top, moisten it,
Add the remaining chocolate cream and cover the entire cake with banana cream. Top with the previously cut sponge cake cubes. Decorate as you wish!
