Bean Hummus

I recommend trying this very tasty recipe that I personally prepare very often even if we are not vegans because we like it a lot! The bean hummus is very simple to prepare and can be served on fresh or toasted bread.

Ingredients for Bean Hummus:
- beans
- onion
- carrot
- celeriac
- mustard
- salt
- garlic
- bell pepper
- extra virgin olive oil
- thyme
- onions
- salt
- tomato sauce
- bay leaf
- pepper
Steps

Put the beans on the fire, previously soaked in cold water. Add the cleaned vegetables and boil them. Cover with water and put the lid on.
Onion sauce preparation:
First, clean and chop the onions.
Add plenty of oil and fry. Add the tomato sauce, spices (bay leaf, pepper, salt)
let it reduce. Once the beans are cooked, remove the vegetables and drain them but do not discard the water.
Add the garlic, a bit of thyme, mustard, oil, and blend with an immersion blender. Add some cooking water and blend until you get a cream.
Place on plates and add onion sauce on top!
