If you’re using dry beans, rinse them well and soak them for a few hours, then put them in a pot with plenty of water. Cook for about 1.5 hours or until they are tender, changing the water a couple of times. If using pre-cooked beans, skip this step.
In a large skillet, add a drizzle of oil and sauté the sausages, add the chopped onion, garlic, carrots, and celery over medium heat, until the vegetables become soft and golden. Add the tomato sauce
after a few minutes, add the cooked beans. Also, add some cooking water and spices. Let it cook for a few minutes.
