A summer recipe, simple to prepare that is perfect for summer and beyond. The roasted bell peppers paired with tuna and seasoned with oil, vinegar, and spices to taste are great to bring to our tables or to the beach under the umbrella! We can enjoy this dish cold as a main course, as a side dish, or as an appetizer served on bruschetta, etc… you can serve it however you like.

Ingredients for Bell Pepper and Tuna Salad:

  • 4 bell peppers
  • salt
  • 7 oz tuna
  • extra virgin olive oil
  • olives
  • oregano
  • vinegar
  • garlic

Steps

The preparation of the bell pepper and tuna salad is very simple, watch the video HERE.

  • First, we need to cook the bell peppers. I chose to use the air fryer, but if you don’t have one, you can easily bake them in the oven. Cook them at 356°F for about 30 minutes, turning them after about 20 minutes. Once cooked, let them cool in the air fryer or oven (this way they are easier to clean). Once cold, we clean them

  • remove the seeds as well, and then cut them into strips. Add the drained tuna, olives, oregano, salt, garlic,

  • Add vinegar and oil. Mix well. Refrigerate for a few hours.

  • Enjoy your meal!
