Blueberry Cheesecake
A delicious cheesecake made with a classic base of cookies and butter and a cream of cheese, yogurt, and fresh blueberries. A perfect dessert for any occasion, from a simple snack, as a dessert at the end of a meal, or why not, as a cake for a birthday! I love blueberries and often include them in my desserts!

Ingredients for the Blueberry Cheesecake:
9-inch pan
- 2 cups cookies
- 1/2 cup butter
- 1 1/2 cups blueberries
- 1/2 cup sugar
- 1 container blueberry Greek yogurt
- 2/3 cup whipping cream
- 5.3 oz cream cheese
- 2 tsp gelatin sheets
- Half lemon (Juice)
Steps
The preparation of the Blueberry Cheesecake is very simple, watch the video HERE.
Base preparation:
First, we crush the cookies and mix them with melted butter. We put them in the pan lined with parchment paper.
Press down well with the back of a spoon. For a more precise result, place an acetate sheet on the edge. Refrigerate for about 30 minutes.
Cream preparation:
In a saucepan, put the blueberries, sugar, lemon juice
Cook for about 10 minutes, stirring occasionally. In a bowl, place the cream cheese, yogurt, blueberries, cream, and mix well.
Squeeze the previously soaked gelatin, add a bit of cream, and dissolve it over the heat or in the microwave. Add it to the mixture, stirring. Place the obtained mixture over the cookie base
Refrigerate for a few hours. After a few hours, remove the pan and decorate as desired.
