Blueberry Swirl Cake

A stunning cake, eye-catching and delicious, made in a swirl style with a very soft base that won’t break and rolls up perfectly, then filled with a cream made of mascarpone, cream, and loads of blueberries! Ingredients for the Blueberry Swirl Cake:

  • 4 eggs
  • 80 g sugar
  • 1/3 cup vegetable oil
  • 1/2 cup flour
  • 4 tbsps water (Hot)
  • vanilla
  • lemon zest
  • blueberries
  • 1 1/2 cups blueberries
  • Half lemon
  • 3/4 cup whipping cream
  • 1/2 cup mascarpone

Steps

  • Base preparation:

    First, separate the yolks from the whites. Add the sugar equally. Start whipping the egg whites using electric beaters. Add hot water to the yolks and begin to whip.

  • Add the oil, grated lemon zest, vanilla flavor, and flour gradually. Mix and fold in the egg whites.

  • Place the batter into a 14″x14″ pan lined with parchment paper. Sprinkle and level. Put some blueberries on top and bake at 350°F for about 20 min.

    Cream preparation:

    In a pan, put the blueberries, sugar, and squeezed lemon juice

  • cook for about 10 min, stirring occasionally. Let cool. In a bowl, put the cream, mascarpone, sugar

  • whip. Add the cooled blueberry mixture and blend well.

    Once the base is baked, flip it, cut the edges

  • then cut 5/6 strips of the same size.

    Spread the cream on top, sprinkle and level. Roll the first strip onto itself

  • place it in the center of the plate. Add the other strips around to form the swirl. Decorate as desired!
