Blueberry Swirl Cake

Ingredients for the Blueberry Swirl Cake:
- 4 eggs
- 80 g sugar
- 1/3 cup vegetable oil
- 1/2 cup flour
- 4 tbsps water (Hot)
- vanilla
- lemon zest
- blueberries
- 1 1/2 cups blueberries
- Half lemon
- 3/4 cup whipping cream
- 1/2 cup mascarpone
Steps
The preparation of the blueberry swirl cake is very simple, watch the video HERE.
Base preparation:
First, separate the yolks from the whites. Add the sugar equally. Start whipping the egg whites using electric beaters. Add hot water to the yolks and begin to whip.
Add the oil, grated lemon zest, vanilla flavor, and flour gradually. Mix and fold in the egg whites.
Place the batter into a 14″x14″ pan lined with parchment paper. Sprinkle and level. Put some blueberries on top and bake at 350°F for about 20 min.
Cream preparation:
In a pan, put the blueberries, sugar, and squeezed lemon juice
cook for about 10 min, stirring occasionally. Let cool. In a bowl, put the cream, mascarpone, sugar
whip. Add the cooled blueberry mixture and blend well.
Once the base is baked, flip it, cut the edges
then cut 5/6 strips of the same size.
Spread the cream on top, sprinkle and level. Roll the first strip onto itself
place it in the center of the plate. Add the other strips around to form the swirl. Decorate as desired!
