Brioche Bread with Ricotta and Chocolate Chips

A perfect recipe to start your day well or to have a super snack for adults and children. Super soft balls made with a simple dough and filled with a filling of ricotta and chocolate chips! For this recipe, I was inspired by a Romanian recipe my mother used to make me during my childhood.

Ingredients for Brioche Bread with Chocolate Chips:

  • 3 1/4 cups flour
  • 1/4 cup butter
  • 1/3 cup milk
  • 1/4 cup sugar
  • 2 tbsp egg yolks
  • 1 jar plain yogurt
  • 0.5 oz fresh yeast
  • vanilla
  • 1 cup cup ricotta
  • 1/2 cup sugar
  • 2 tbsp egg yolks
  • lemon zest
  • chocolate chips
  • rum (Or rum flavoring)

Steps

  • Dough preparation:

    Add the flour, a pinch of salt, sugar, egg yolks, yogurt, milk, crumbled yeast.

  • Add vanilla and knead for about 10 mins then add butter and continue kneading until fully incorporated. Transfer to a container, cover, and let rise until doubled in volume.

  • Filling preparation:

    Add ricotta, sugar, lemon zest, rum flavoring, and rum, mix.

  • Add egg yolks and chocolate chips.

    Assembly:

    After a few hours, take half the dough and roll it out.

  • Form a square and cut it into 4 equal parts. Place some filling on each piece and close by bringing the corners together.

  • Brush with some beaten egg and bake at 350°F for 25/30 mins.

  • Enjoy your meal!
