Brioche Bread with Ricotta and Chocolate Chips
A perfect recipe to start your day well or to have a super snack for adults and children. Super soft balls made with a simple dough and filled with a filling of ricotta and chocolate chips! For this recipe, I was inspired by a Romanian recipe my mother used to make me during my childhood.

Ingredients for Brioche Bread with Chocolate Chips:
- 3 1/4 cups flour
- 1/4 cup butter
- 1/3 cup milk
- 1/4 cup sugar
- 2 tbsp egg yolks
- 1 jar plain yogurt
- 0.5 oz fresh yeast
- vanilla
- 1 cup cup ricotta
- 1/2 cup sugar
- 2 tbsp egg yolks
- lemon zest
- chocolate chips
- rum (Or rum flavoring)

Dough preparation:
Add the flour, a pinch of salt, sugar, egg yolks, yogurt, milk, crumbled yeast.
Add vanilla and knead for about 10 mins then add butter and continue kneading until fully incorporated. Transfer to a container, cover, and let rise until doubled in volume.
Filling preparation:
Add ricotta, sugar, lemon zest, rum flavoring, and rum, mix.
Add egg yolks and chocolate chips.
Assembly:
After a few hours, take half the dough and roll it out.
Form a square and cut it into 4 equal parts. Place some filling on each piece and close by bringing the corners together.
Brush with some beaten egg and bake at 350°F for 25/30 mins.
