Cake with Chestnut Cream and Sour Cherries

A cake that’s a bit unusual but seasonal in my opinion, made with chestnuts and sour cherries. A combination that I must say I personally liked a lot. So if you like chestnuts and sour cherries, I highly recommend trying this recipe that you will surely love. If you want to bring a different dessert to the table for the holiday season, try this cake which is also very simple to prepare and requires no baking.

Ingredients for the Cake with Chestnut Cream and Sour Cherries:

  • 4 tbsps powdered sugar
  • 7 oz marron glacés
  • cups heavy whipping cream
  • 2 tsps amaretto (liqueur)
  • 2 tsps gelatin sheets
  • oz ladyfingers
  • 4 tsps sugar syrup
  • sour cherries

  • First, blend the marrons glacés by gradually adding the sugar. Finally, add the sugar syrup and blend a bit more until you reach the desired consistency. Use a whisk to mix the obtained mixture.

  • Meanwhile, dissolve the previously hydrated gelatin with a little amaretto liqueur and add it. Use a whisk to mix. Gradually add the semi-whipped cream.

  • Continue whisking. Meanwhile, place the drained sour cherries at the bottom of the mold as desired, then add the obtained mixture. Level the mixture.

  • Dilute the sour cherry syrup with a bit of water and soak the ladyfingers, then place them on top. Put the cake in the fridge for a few hours, then remove the mold, flip it over, and decorate as desired.
