Cantucci
A typical Tuscan dessert known throughout Italy that is usually consumed at the end of a meal during the Christmas period, often accompanied by Vin Santo!
The cantuccini are very simple to prepare and can also be a cute and original gift idea for friends and family during the Christmas season. I have searched for the perfect recipe for years to make cantucci, and I must say that this year I am very satisfied with the result! If you like nutmeg or other spices, you can comfortably add them, or if you prefer, instead of almonds, you can use hazelnuts, pistachios, or candied fruits, chocolate chips, etc.

Ingredients for cantucci:
- 2.5 oz butter
- 5 oz sugar
- 2.8 oz eggs
- 1.5 cups flour
- 0.04 oz baking powder
- 3.5 oz almonds

Steps

For this recipe, I chose to use the stand mixer, but you can comfortably use electric whisks as well.
Put the butter, sugar, and start working for a few minutes. Gradually add the eggs, baking powder, and flour, and knead for a few minutes.
Finally, add the almonds and mix well. Sprinkle some flour on the work surface and transfer the dough obtained. Take a bit of dough at a time (I divided it into 4 parts) and add a little more flour, then roll them into logs. Place them on a baking sheet lined with parchment paper, a little apart from each other. Bake at 375°F for about 15 minutes. Once baking is complete, let them cool slightly before cutting.
Place them back on the tray with the cut side up and bake at 300°F for about 10 minutes, placing a spoon in the oven door.

Tip:
If you want a more intense color, you can brush them with egg before baking the logs.
