Chocolate and Cream Mimosa Cake without eggs
A delicious mimosa made WITHOUT EGGS to please those who do not eat eggs for various reasons. A cocoa base filled with a cream of whipped cream and mascarpone, a perfect combination that you won’t notice the absence of eggs! Ingredients for the Chocolate and Cream Egg-free Mimosa Cake:
- 1 3/4 cups flour
- 2/3 cup milk
- 1 jar plain yogurt
- 1/3 cup vegetable oil
- 1 cup sugar
- 1/3 cup unsweetened cocoa powder
- 1/3 cup potato starch
- 1 packet baking powder
- 1 1/4 cups whipping cream
- 7 oz mascarpone
- 1/2 cup sugar
Steps

Base preparation:
In a bowl, mix the flour, sugar, potato starch, cocoa, and baking powder. Add the yogurt, milk, oil, and mix.
Pour the mixture into the mold and bake at 350°F for about 40/50 minutes. Once cooked and well cooled, remove it from the mold and cut three equal discs.
Cut one disc into cubes.
Cream preparation:
Combine the mascarpone, sugar, and cream and beat.
Assembly:
Place the first disc, moisten it
add a layer of cream. Place the second disc, moisten it, and cover the entire cake with the remaining cream.
Add the previously cut cubes on top and decorate as desired.
