Chocolate Cake with Coffee Cream

Ingredients for Chocolate Cake with Coffee Cream:
- 5 eggs
- 1 1/4 cups flour
- 1/3 cup unsweetened cocoa powder
- 1 cup sugar
- Half packet baking powder
- 1 cup milk
- 1 cup sugar
- 3 tbsps cornstarch
- 8.8 oz mascarpone
- 1 cup heavy cream
- 1 egg
- 4 tbsps instant coffee
- 3.5 oz dark chocolate
- 1/2 cup heavy cream

Base preparation: In a bowl, place the eggs and start beating them with an electric mixer. Gradually add the sugar and continue until you get a light creamy mixture.
Slowly add the sifted flour and mix well. Add the cocoa, then the baking powder and mix well. Pour the mixture into a floured mold.
Cream preparation:
In a small saucepan, place the egg, sugar, coffee, cornstarch, and mix well.
Add the milk while stirring and bring to the stove to thicken, stirring constantly (it will take a few minutes). Once thickened, transfer the cream to a bowl.
Cover with plastic wrap and let cool. Once cooled, soften it with the mixer for a few seconds. Add the cream and whip.
Add the mascarpone and mix well.
Assembly:
Place the first piece of sponge cake, sprinkle it with a bit of water, sugar, and rum flavoring. Spread a layer of cream.
Level it. Add the second piece of sponge cake, sprinkle, and cover with another layer of cream.
Finally, place the third piece of sponge cake, sprinkle, and cover the entire cake with the remaining cream, including the edge.
Level and place in the fridge for a few hours.
Glaze preparation:
Pour hot cream over the chocolate and mix until it melts well. Wait a few seconds to let it cool slightly and then glaze the cake.
Clean the edge if needed and place in the fridge for at least 30 minutes, then decorate as desired.
