Ingredients for the Chocolate Christmas Log:
- 4 eggs
- 1/2 cup flour
- 1/4 cup vegetable oil
- 1/3 cup sugar
- 4 tablespoons water (Hot)
- lemon zest
- 3/4 cup heavy whipping cream
- 1/4 cup sugar
- 1 tablespoon hazelnut cream
- 3.5 oz mascarpone cheese
- 5.3 oz dark chocolate

Base preparation:
Separate the egg yolks and whites. Combine the sugar with the egg whites and beat with an electric mixer. Add a pinch of salt to the yolks, the hot water, and beat until creamy and light.
Add the oil, flour, a bit of zest, and mix well. Gently fold in the beaten egg whites a little at a time.
Pour the batter onto a baking sheet lined with parchment paper. Spread evenly, smooth, and tap lightly. Bake at 350°F for about 15 min.
As soon as it’s baked, place another sheet of parchment paper on top and flip it. Remove the dirty paper and roll it up. Let cool.
Cream preparation:
Add the cream.
Add the mascarpone, hazelnut cream, sugar, and whip.
Assembly:
Unroll the cooled log.
Spread 3/4 of the cream. Level, roll up, and refrigerate for a few hours.
For decoration, melt the dark chocolate.
Spread it on a sheet of parchment paper. Place another sheet of parchment on top and roll. Freeze for about 10 min.
After a few hours, take the roll out of the fridge, cut the two ends, then cut two pieces to form the log trunk. Arrange the pieces as desired.
Cover the entire surface with the remaining cream. Take the chocolate roll from the freezer, open it, and decorate with the obtained pieces. Sprinkle a little powdered sugar and currants on top.
