In a large bowl, mix together flour, sugar, baking powder, and salt.
Add the soft butter, milk, and vanilla extract. Knead until you get a smooth and homogeneous mixture.
Divide the dough into pieces and form thin logs.
Cut the logs into pieces about 3/8 inch.
Heat the oil in a small pan to 338–356°F.
Fry the struffoli a few at a time until evenly golden.
Drain on paper towels and let cool.
Melt the dark chocolate in a double boiler.
Pour the fried struffoli into the melted chocolate and stir gently until covered.
On a serving plate, create the shape of a Christmas tree, stacking the struffoli on top of each other, starting with a wide base and tapering towards the top.
Decorate with sugar sprinkles, colored sprinkles, sugar balls, or other Christmas decorations.
Allow to set at room temperature before serving.
