Ingredients

  • 6 eggs
  • 2.8 oz spinach
  • 1 zucchini
  • 2 spring onions
  • 1/4 cup milk
  • 1.8 oz Parmesan cheese
  • salt
  • pepper
  • 5.3 oz cream cheese
  • 1.8 oz ricotta
  • 1 tsp Parmesan cheese
  • spices (to taste)

Steps

  • Sauté the onion with a bit of oil, grate the zucchini and add it, cook for a few minutes then let it cool.

  • Wash and boil the spinach for 2-3 minutes, then squeeze them well. Add them to the zucchini

  • add the milk, eggs, Parmesan, salt, and blend until you get a cream.

  • Pour the mixture into a mold. Cook at 340°F for 12-14 minutes, until the frittata is firm and slightly golden.
    Let it cool completely.
    Prepare the cheese cream
    In a small bowl, mix together cream cheese, ricotta, Parmesan, and herbs.

  • Season with salt and pepper and transfer the cream into a piping bag.

  • Once cool, cut the frittata with star-shaped cutters of different sizes.

  • Stack 3 or 4 stars, alternating each layer with a layer of cheese cream to secure them and give volume.

  • add a red currant on top, proceed the same way using round molds.

You can prepare the frittata the day before and store it in the fridge.

The cheese cream can be flavored with pesto or turmeric for colorful effects.

The trees can be stored in the refrigerator for up to 24 hours, ready to serve cold or slightly warm.

If you want a lighter version, replace the cream cheese with light ricotta.
