Christmas Log Tiramisu
A spectacular Christmas dessert that features the flavors of the most loved traditional dessert 🤩”His Majesty the TIRAMISU“!!! It’s the dessert that is never missing at any party or in any restaurant! So why not combine two famous desserts and create just one?! Said and done! I made the base of the log using coffee and brown sugar, then filled it with a mascarpone, cream, and coffee cream, and finally, a heart of sponge fingers soaked ☺️ thus I incorporated the tiramisu ingredients into the log!! Bring this wonder to the table for Christmas Eve, the Christmas lunch, or the New Year’s Eve dinner!!!

Ingredients
- 6 eggs
- 0.5 cups flour
- 0.3 cups vegetable oil
- 2.8 oz brown sugar
- 4 tbsps water (Hot)
- 2 tsps instant coffee
- salt
- 4.2 oz mascarpone
- 1 cup whipping cream
- 3.5 oz sugar
- 3 tsps instant coffee
- 3 sponge fingers
- as needed coffee
Steps

Base preparation:
Separate the yolks from the whites. Add sugar to the whites and beat. Add instant coffee, hot water, and a pinch of salt to the yolks
Beat well. Add the oil, flour, and mix well. Gently fold in the beaten egg whites a little at a time.
Place parchment paper in the baking tray, add the mixture. Spread and level it. Bake at 350°F for about 20 minutes.
Cream preparation:
Add cream, instant coffee, sugar, mascarpone, and beat.
Assembly:
Once the base is ready, cover it with another sheet of paper and flip it over, then remove the parchment paper attached during baking and roll it up. Allow to cool well
then unroll and spread about 3/4 of the prepared cream. Spread and level it. Dip the sponge fingers in coffee/milk
and place them on the edge. Roll up and refrigerate for a few hours. After a few hours, cut off the ends
then cut two pieces and form the log. Cover it with the remaining cream and decorate as desired.
