Christmas Log with Cream and White Chocolate

A soft log made as a roll filled with Chantilly cream, then assembled like a trunk and decorated with white chocolate recreating the bark. A very scenic dessert ideal to serve at the table during the Christmas period and perfect to include in our Christmas menu. I guarantee you’ll make a great impression 😉.

Ingredients for the Christmas Log with Cream and White Chocolate:

12×16 inches

  • 4 eggs
  • 2.8 oz sugar
  • 2.5 oz flour
  • 1/3 cup vegetable oil
  • 4 tbsp water (Hot)
  • lemon zest
  • salt
  • vanilla
  • 1 cup milk
  • 3.2 oz sugar
  • 1.8 oz egg yolks
  • 0.5 oz cornstarch
  • 0.5 oz rice starch
  • lemon zest
  • salt
  • 9 oz whipped cream
  • 3.5 oz white chocolate

Steps

  • Base preparation:

    First, separate the yolks and whites. Add sugar to the whites and whip them. Add a pinch of salt to the yolks, add the hot water and whip them.

  • Add the oil and mix. Add the flour, a bit of vanilla, lemon zest and mix.

  • Gently fold in the whipped egg whites. Pour the mixture into a pan lined with parchment paper (12×16 inches), level it.

  • Bake at 356°F for about 15 minutes. Once baked, place a sheet of parchment paper on top and flip it over. Remove the attached parchment paper.

    Cream preparation:

    In a bowl, place the yolks. Add the rice starch and cornstarch.

  • Add the sugar and mix. Add 100 ml of cold milk and blend. Meanwhile, heat the remaining milk well with the lemon peel inside

  • then add it while stirring. Put it in the microwave until it thickens, pulling it out every minute to stir. It will take 4/5 minutes depending on the power of your microwave. Once thickened

  • remove the peel, cover with plastic wrap and place in the freezer for an hour to cool.

    Assembly:

    Moisten the base with a little water, sugar, and flavors as desired. Add the whipped cream to the cold cream.

  • mix well. Spread 3/4 of the cream on top, sprinkle and level well, then roll up

  • put in the fridge for a few hours.

    After a few hours, cut the edges then cut two pieces

  • form the trunk. Attach the pieces together with some cream and cover the entire surface with the remaining cream.

    For the decoration:

    Melt the white chocolate

  • place it on a sheet of parchment paper. Spread and level it well then roll it up and place it in the freezer for about 10 minutes. Then, open the sheet and break the chocolate into pieces.

  • Decorate the log with the pieces obtained. Sprinkle with a little powdered sugar.
