Ingredients for the Christmas Pavlova Roll: Soft Meringue with Cream and Sour Cherries:
pan 14×14 inches
- 5 egg whites
- 8.8 oz sugar
- 1 tsp apple cider vinegar
- 1 tsp cornstarch
- vanilla
- 1 cup cup heavy cream
- 2 tbsps sugar
- 7 oz sour cherries

Large bowl (to whip the egg whites)
Electric whisks or stand mixer (essential for whipping the meringue to stiff peaks)
Silicone spatula (to gently fold in cornstarch, vinegar, and vanilla)
Rectangular baking tray 14×10 inches (or similar, to spread the meringue)
Parchment paper (to line the tray and roll the dessert)
Sifter (to dust powdered sugar on the base)
Serrated knife (to trim the edges of the meringue if necessary)
Bowl and whisks (to whip the cream)
Spoon or spatula (to spread the filling)

Steps

In a bowl, beat the egg whites with electric whisks until soft peaks form.
Add the sugar one tablespoon at a time, continuing to beat until you get a glossy and firm meringue.
Gently fold in vinegar, cornstarch, and vanilla, mixing with a spatula.
Line a 14×10 inch pan with parchment paper and spread the meringue in an even layer (about 0.8 inches).
Bake in a preheated static oven at 320 °F for 20 minutes, then lower to 285 °F and continue baking for another 15 minutes.
The surface should be dry but not too hard.
Remove from oven and invert the meringue onto a new sheet of parchment paper dusted with powdered sugar.
Gently remove the paper used for baking and roll the meringue onto itself using the clean paper.
Let cool completely while rolled. Cook the sour cherries with sugar for about 10 minutes and let cool.
Whip the cream with the sugar then add the sour cherry mixture.
Gently unroll the cooled meringue, spread the cream obtained.
Roll it up again and transfer the roll to a serving plate.
Decorate as desired!

You can replace the sour cherries with red fruits, chestnut cream, or chocolate pieces for a more indulgent version.
Prepare the meringue the day before and store it well-covered at room temperature: fill it just before serving.
