Ingredients for Citrus Marmalade:
- 1.1 lbs oranges (Unwaxed)
- 10.6 oz mandarins (Unwaxed)
- 10.6 oz lemons (Unwaxed)
- 2.5 cups sugar
- 3.4 cups water
- baking soda
Steps
The preparation of citrus marmalade is very simple, watch the video HERE.
First, wash the fruit with water and baking soda using a rough sponge or spatula. Remove the first slice, then cut the fruit into very thin slices. I used a mandoline slicer. Place the slices in a container and cover with cold water. Cover with plastic wrap and refrigerate for a full day. The next day, change the water and repeat the process for another day. After a total of two days, boil the slices for about 10 min. Drain, then add 3.4 cups water, sugar, and cook for about 40 minutes, stirring occasionally. After about 40 minutes, blend and cook for another 10 min. Once the desired consistency is reached, immediately put it into sterilized jars. Seal the jars tightly and invert them to create a vacuum effect. If you want to store it longer, boil the jars again for about 20 min.
