Coconut and Nutella Mimosa

Another wonderful mimosa cake that you can prepare for International Women’s Day on March 8th and more, I always make this mimosa 😁. I made this mimosa for a friend of mine and, of course, I added her favorite flavors: coconut and Nutella. I must say this is one of the best mimosas I’ve ever made! Maybe it’s the combination 😁. Try it, you won’t regret it!

Ingredients for Coconut and Nutella Mimosa:

  • 1 egg
  • 1 cup milk
  • 1/2 cup sugar
  • 1/2 cup shredded coconut
  • 3 tbsps cornstarch
  • 5 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1/3 cup potato starch
  • Half packet baking powder
  • 1 cup whipping cream (Semi-whipped)
  • 2/3 cup Nutella® (Or similar)

Steps

  • Cream preparation:

    Place the egg, cornstarch, sugar, and mix. Add the milk while stirring to avoid lumps. Bring to heat to thicken.

  • Keep stirring. Once thickened, remove from heat, add shredded coconut, and mix well. Transfer the cream to a bowl,

  • cover with plastic wrap, and let it cool.

    Sponge Cake Preparation:

    Beat the eggs with the sugar until creamy (it should triple in volume). Add the baking powder and flour gradually, reducing speed to a minimum. Pour the mixture into the mold

  • bake at 350°F for about 50 minutes. Once baked and well-cooled, remove the crust from the surface, then cut into three equal disks. Cut one disk into cubes

  • keep them for decoration.

    Once the cream is cold, soften it a bit with a spatula and add the semi-whipped cream.

    Assembly:

    Place the first disk of sponge cake and soak it with coconut milk.

  • Add Nutella, a layer of cream, and place the second disk of sponge cake on top. Soak it with hazelnut milk or coconut milk

  • cover the entire surface with the remaining cream. Place the previously cut sponge cake cubes on top. Decorate as desired.
