  • 1.1 lbs desalted cod
  • 1 red onion
  • extra virgin olive oil
  • 1/2 cup flour
  • capers
  • olives
  • 1 2/3 cups tomato puree

Steps

  • First, sauté the onion with some oil. I have already desalted the cod by keeping it in water in the fridge for 3 days and changing the water twice a day.) Coat the cod pieces in flour and then place them in the pan with the onion.

  • Cook for a few minutes on both sides. Add the capers, olives, and tomato puree,

  • Add a little water and cook for about 30 minutes, stirring occasionally.
