Coffee and Chocolate Cheesecake (No-Bake) I’d say there’s no better combination than this! A fresh, summer dessert made without baking that we can enjoy at the end of a meal, as a snack, etc. A base made with cocoa cookies then a delicious coffee-flavored layer and finally a chocolate glaze, words cannot describe the goodness of this dessert!!!!

Ingredients for Coffee and Chocolate Cheesecake (No-Bake):
8-inch mold
- 9 oz cocoa cookies
- 8 tbsp butter
- 1 2/3 cups heavy cream
- 1 cup sugar
- 7 oz cream cheese
- 0.42 oz gelatin sheets (6 sheets)
- 4 tbsp instant coffee
- Coffee flavoring (Optional)
- 3.5 oz dark chocolate

Base preparation:
Crush the cookies and combine them with melted butter. Mix well and place them in the pan lined with parchment paper on the bottom. Compact well.
Put in the fridge for about 30 min. Filling preparation: First, soak the gelatin in cold water for about 10 min. In a bowl, put the coffee, cream.
Add the cream cheese, a bit of coffee flavoring and mix and lightly whip. Add the sugar and mix. Dissolve the gelatin on the stove with a little water (1 tablespoon).
Let it cool slightly then add it and mix well. Take the base from the fridge and place a strip of acetate sheet around it (optional).
Place the mixture. Put in the fridge for a few hours. Glaze preparation: Combine the chocolate with the hot cream and let it melt, mixing well.
Pour the glaze over the cheesecake (after a few hours), spreading it over the entire surface. Return to the fridge for a few more hours, then remove the pan and decorate as desired.
