Cream Puffs
The cream puff is a dessert loved by everyone, from the youngest to the oldest. It’s a very versatile dessert that we can fill with any type of cream according to our taste. But of course, the classics, in my opinion, remain the best. Today I propose a simple yet delicious recipe for cream puffs, it’s hard for me to stop after the first one 🙈.

Ingredients for cream puffs:
With these quantities, I made about 40 cream puffs
- 7 oz water
- 3 tbsp butter
- 1 1/3 cups flour
- 7 oz eggs
- 7 oz milk
- 1.7 oz heavy cream
- lemon zest
- lemon flavoring
- 2 tbsp rice starch
- 2 tbsp cornstarch
- 1 egg
- 2/5 cup sugar
- 1 1/3 tbsp butter

Preparing choux pastry:
In a saucepan, place the water, a bit of salt, the butter and bring to a boil. Add the flour and mix until you get a compact ball.
As soon as a crust forms, turn off and let the dough cool in a stand mixer at low speed. When it becomes lukewarm, begin to add the eggs a little at a time, allowing them to fully incorporate before adding more.
Transfer the obtained mixture into a piping bag. Cut a sheet of parchment paper into four and form the cream puffs. Press down the tips with a wet finger if needed.
Place them in the hot oil (with the paper) then as soon as the paper detaches, remove it and fry for a few more minutes. Let them drain on parchment paper.
Proceed this way with all.
Cream preparation:
Boil the milk with the lemon peel (I always do it in the microwave). In a microwave-safe container, place the sugar, the rice starch, and the cornstarch.
mix. Add the egg, the cream, the milk and blend well. Put the container in the microwave until the cream thickens, taking it out every minute and mixing with a whisk (it will take 4/5 minutes depending on the power of your microwave). Once thickened, remove the peel, add the butter
cover with food wrap and place it (if possible) in the freezer or fridge! Once cold fill the cream puffs using a piping bag.
