Today I’m offering you a creamy and very tasty soup made with asparagus, potatoes, and cheese, a real delight! This recipe is very simple to prepare and great to serve for lunch or dinner!

  • 17.6 oz asparagus
  • 17.6 oz potatoes
  • 7 oz cheese
  • 1 onion
  • garlic
  • extra virgin olive oil

Steps

The preparation of the Creamy Asparagus Soup is very simple to prepare, watch the video HERE.

  • First, we need to clean the asparagus by removing the tough root part, I used wild asparagus but the ones from the supermarket are also fine. We wash them well and blanch them (if you use supermarket ones, you can skip this step). In a pot, put some oil, onion, garlic, and let it sauté.

  • Add the cleaned, washed, and diced potatoes, then cover them with water. Salt and cook for about 10 minutes, then add the asparagus and continue cooking for another 10 minutes.

  • Once the vegetables are cooked, blend them with an immersion blender, then add the cheese and mix everything well.
