Creamy Asparagus Soup
Soups are a warm comfort for cold or rainy days in my opinion, although I won’t deny that I like them so much I could eat them all the time! Today I’m offering you a creamy and very tasty soup made with asparagus, potatoes, and cheese, a real delight! This recipe is very simple to prepare and great to serve for lunch or dinner!

- 17.6 oz asparagus
- 17.6 oz potatoes
- 7 oz cheese
- 1 onion
- garlic
- extra virgin olive oil

The preparation of the Creamy Asparagus Soup is very simple to prepare, watch the video HERE.
First, we need to clean the asparagus by removing the tough root part, I used wild asparagus but the ones from the supermarket are also fine. We wash them well and blanch them (if you use supermarket ones, you can skip this step). In a pot, put some oil, onion, garlic, and let it sauté.
Add the cleaned, washed, and diced potatoes, then cover them with water. Salt and cook for about 10 minutes, then add the asparagus and continue cooking for another 10 minutes.
Once the vegetables are cooked, blend them with an immersion blender, then add the cheese and mix everything well.
