Creamy Lemon Risotto

Ingredients for the creamy lemon risotto:
- 5.6 oz rice
- Half onion
- 1 1/4 cups water
- 1/4 cup white wine
- 1/4 cup lemon juice
- lemon zest
- 1 oz Parmesan cheese
- 1 oz scamorza cheese
- 3/4 oz butter
- extra virgin olive oil
- salt
- bouillon cube
- ground ginger

In a pan, add some oil, the cleaned and chopped onion, and let it sauté. Add the previously drained rice.
Toast for a few minutes. Deglaze with white wine and let it evaporate. Add water gradually and let it cook, stirring occasionally. Add the vegetable bouillon cube and/or salt to taste.
Add some ground ginger to taste. At the end of cooking, add the butter, lemon zest, and juice. Turn off the heat and add the Parmesan and diced scamorza cheese.
