Prepare the apple filling:
Peel and dice the apples. Place in a pan with the apples, sugar, and margarine. Cook for about 10 minutes until soft but not mushy. Add cinnamon, stir, and let cool completely.
Mix sugar + cinnamon in a small bowl. Prepare the discs:
cut out many discs from the dough using a round cutter or glass. Knead and roll out the scraps to make more.
Dip each disc in melted margarine, then in the cinnamon sugar. Place a bit of apple filling on each disc. Stack the discs one on top of another until finished. Place the stack of discs in a loaf pan lined with parchment paper. Bake at 356°F (180°C) for about 30 minutes or until the surface is golden.
Final Glaze:
Mix powdered sugar and lemon juice until smooth. Pour the glaze over the still warm plumcake.
Great to enjoy both warm and at room temperature: the aroma of apples and cinnamon makes it perfect for autumn breakfasts and snacks!
