The egg-free colomba tiramisu is one of the desserts I often prepare during the Easter period. It is an easy, quick recipe and perfect for using the Easter colomba, especially if some is left over after the holidays.
This version is even simpler because the cream is egg-free, so it is prepared in a few minutes with mascarpone and whipped cream. The result is a creamy, fragrant and truly irresistible dessert.
It is the ideal dessert to serve after Easter lunch, because it is fresh, indulgent and everyone always likes it.

Ingredients

  • Half colomba (Easter dove cake)
  • 1 2/3 cups heavy cream (for whipping)
  • 7 oz mascarpone (about 7/8 cup)
  • 1/2 cup granulated sugar

  • Prepare the cream
    First, place the mascarpone and sugar in a bowl.
    Begin working the mixture with a whisk until you obtain a smooth cream.
    At this point add the heavy cream.
    Continue whipping until you obtain a soft, well-whipped cream.

  • Prepare the base
    Slice the egg-free colomba into pieces.
    Arrange a layer of colomba on the bottom of the baking dish.
    Soak the slices with sweetened coffee.
    Add a layer of cream on top of the colomba.
    Spread and level it well.

  • Sprinkle a little unsweetened cocoa powder.
    Place a second layer of colomba.
    Soak again with sweetened coffee.

  • Cover with the remaining cream and level well.
    Finish with a generous layer of unsweetened cocoa powder.
    Rest
    Place the tiramisu in the refrigerator for a few hours so the flavors blend perfectly.
