Easy, quick and very showy Easter appetizer
The egg muffins are a really simple and cute recipe that I often prepare as an appetizer for Easter. They are small savory muffins, soft, colorful and very showy, perfect to bring to the table during the Easter lunch.
I like them because they are:
very easy to prepare
ready in a few minutes
customizable with vegetables, cheeses or cured meats
They can also be prepared in advance and served hot or at room temperature. The colorful bell pepper and aromatic herbs make them even more beautiful and appetizing.

Ingredients
For 8 muffins
- 6 eggs
- 1/4 cup milk
- 1 bell pepper
- fresh herbs
- salt
- garlic
- cheeses (As desired)

Prepare the ingredients
First, cut the bell pepper into small pieces.
Take the muffin tins and place a few pieces of bell pepper on the bottom of each cup.
Also add a little of the fresh herbs and a bit of grated cheese.
Make the egg mixture
In a bowl crack the eggs.
Add:
a pinch of salt
the minced garlic
Whisk everything with a whisk until you obtain a smooth mixture. Add the milk.
Fill the molds
Pour the egg mixture into the muffin tins.
Finish by adding on top:
another few pieces of bell pepper
a little of the fresh herbs
Baking
Place the tins in the oven and bake at 356°F for about 20-25 minutes.
When the muffins are puffed and golden, remove them from the oven and let them cool slightly.

You will get soft, colorful and fragrant egg muffins, perfect as a simple but very cute Easter appetizer to present at the table.
