Eggless Birthday Cake (Medovik style)
A delicious cake made with 9 cocoa disks and 9 layers of cream. I must say that among the various eggless cakes, this is the one I liked the most both for its taste and also for its aesthetics when sliced! Ingredients for the Eggless Birthday Cake (Medovik style):
- 3 1/2 cups flour
- 1/2 cup sugar
- 1/2 cup plain yogurt
- 7 tbsps vegetable oil
- rum flavoring
- 1/2 cup unsweetened cocoa powder
- 1/4 cup milk
- 1 tsp baking soda
- 28 oz whipped cream
- chocolate chips (Shavings)

Preparation of disks:
Let’s add flour, sugar, cocoa, baking soda, yogurt, rum flavoring, oil.
Start kneading. Add milk and continue for a few seconds. The dough is ready as soon as it combines. We divide it into 9 parts, about 3.5 oz each.
Roll out one piece at a time on a sheet of baking paper to obtain a diameter of about 7 inches. Cut the precise circle using a cake ring but also keep the edge. Continue in the same way with the other 8 pieces.
Prick the disks and bake at 356°F for about 10 min.
Assembly:
Put some cream in the center then place the first baked and cooled disk. Add a layer of cream,
Add another disk and continue alternating the layers. Occasionally add some chocolate shavings or chips. Finally, cover the entire surface with the remaining cream. Put the cake in the fridge for a few hours.
Chop the scraps of the disks and make a small strip on the edge of the cake. Remove the excess with the spatula. Decorate as you like with chocolate ganache, etc.
