Eggless Chocolate Mimosa Cake
A cake made without eggs, with a cocoa base and a chocolate cream 🍫 then covered with cubes as is typical of the mimosa cake. A dessert to enjoy on any occasion, not just on March 8th ☺️.

Ingredients for the Eggless Chocolate Mimosa Cake:
8-inch pan
- 5 tbsp unsweetened cocoa powder
- 1 jar plain yogurt
- 1/3 cup vegetable oil
- 2/3 cup milk
- 1/3 cup potato starch
- 1 cup sugar
- 1 packet baking powder
- 2 cups milk
- 1/3 cup cornstarch
- 5 tbsp unsweetened cocoa powder
- 2/3 cup butter
- 1 1/4 cup sugar
- rum flavor
- 1 1/4 cups whipped cream
Steps
The preparation of the chocolate mimosa cake is very simple, watch the video HERE.
Base preparation:
In a bowl, put the cocoa, starch, flour, sugar, baking powder, and mix. Add the yogurt, milk,
oil, and mix. Pour into the pan. Level and bake at 350°F for about 40 minutes.
Cream preparation:
Put the sugar, starch,
cocoa, and mix. Add the milk a little at a time and bring to a boil to thicken. Stir occasionally.
It will take a few minutes. Once thickened, add the butter and a little rum flavor.
Mix well. Cover with plastic wrap and let cool. Once cool, add the whipped cream and fold gently.
Assembly:
Take the cold base, trim off the crust then divide it into three equal layers. Cut one layer and the crust into cubes. In a bowl, put water and sugar and bring to a boil, then let cool.
add a little rum flavor or rum. Place the first layer, soak it, add a layer of cream, level.
Place the second layer, soak it, cover the entire surface with the remaining cream. Clean the edges if needed, then place the previously cut cubes on top.
Refrigerate for a few hours.
