Eggless Mimosa Cake with Nutella

March 8th is approaching and, as tradition dictates, it’s time to prepare the mimosa. Since my husband loves Nutella but doesn’t eat eggs, I decided to make him happy with an eggless version filled with Nutella, a true delicacy! A very simple dessert to prepare and great to serve at the end of a meal and not only! The mimosa is my favorite cake and I tell you that I don’t prepare it only for Women’s Day but at least 4/5 times a year 🙈.

Ingredients for Eggless Mimosa Cake with Nutella:

8-inch pan

  • 7 oz milk
  • 1 1/2 cups flour
  • 1/4 cup potato starch
  • vanilla
  • hazelnut sprinkles
  • Half packet baking powder
  • lemon zest
  • 1/4 cup vegetable oil
  • 9 oz Nutella® (Or similar)

Steps

  • In a bowl, combine milk, oil, vanilla, a bit of lemon zest, sugar, and mix. Add the potato starch.

  • Add the flour gradually while mixing with an electric mixer. Finally, add the baking powder and mix well. Pour the batter into a floured mold and bake at 350°F for about 40 minutes.

  • Once ready, let it cool completely, then cut off the dome to level the sponge cake (if needed), and cut a thin layer. Also, cut the edge and then divide it into two equal discs.

  • Take the first disc (the thin one) and cut it into cubes, also cut the dome and keep it for decoration.

    Prepare the syrup by mixing water and sugar

  • Add a bit of rum flavor or other aromas as desired and mix. Place the first sponge cake disc, and soak it.

  • Add a layer of Nutella (about 3 1/2 oz) and some hazelnut sprinkles. Add the second sponge cake disc, soak it, then cover the entire surface with Nutella (about 5 1/2 oz) including the edges.

  • If needed, clean the plate edge, then cover with the previously cut cubes. Add some hazelnut sprinkles on top and decorate as desired.
