Eggless Papanasi
You have surely heard of these delightful treats, they are a type of donut made with dough that includes ricotta and yogurt, then fried and topped with sour cream and jam, they are DELICIOUS. Papanasi are traditional Romanian desserts very easy to make!

Ingredients for eggless papanasi:
- 2 cups cups ricotta
- 2 1/2 cups cups flour
- 1/4 cup cup sugar
- 1/2 cup cup plain natural yogurt
- 1 tsp baking soda
- vanilla
- lemon zest (And orange)
- seed oil (For frying)
- sour cream
- jam
Steps

Dough preparation:
Put the well-drained ricotta, sugar, baking soda, lemon and orange zest, yogurt and mix.
Add vanilla and flour gradually while kneading. We need to get a soft dough. Let it rest for about 30 minutes.
After about 30 minutes, using a bit of flour, take some dough about 1 1/2 oz and form a ball. Take another piece of dough (about 4 oz) and form a donut.
Proceed like this until the dough is finished. Then fry them in hot oil for a few minutes, turning on both sides.
Place them on absorbent paper. Once cooking is finished, place a donut,
cover it with cream and jam, add a ball and cover it too with a bit of cream and jam.
Finally, sprinkle with some powdered sugar on top!
