Eggless Skillet Fig Cake

I have developed a taste for making desserts with figs, and since a few days ago I made a skillet fig cake with eggs, my husband was disappointed because he couldn’t try it (because he doesn’t eat eggs), so I made it in an EGGLESS version! To tell the truth, it might have turned out even better 🤣. If you don’t feel like turning on the oven to prepare a cake, this recipe is for you.

Ingredients for the Eggless Skillet Fig Cake:

  • 3/4 cup flour
  • 4 tbsp potato starch
  • 2/3 cup yogurt
  • 2/3 cup sugar
  • 1/4 cup butter
  • Half packet baking powder
  • 10.5 oz figs
  • lemon zest

Steps

  • In a bowl, mix the melted butter with yogurt, add some lemon zest, sugar and mix. Add the flour, potato starch,

  • Add the baking powder and mix well. Wash and clean the figs, then add some fig pieces to the mixture. Mix gently. Take a skillet (8 inches) and butter it a bit.

  • Place some fig pieces at the bottom. Add the mixture, spread and level it. Add a few more figs,

  • cover it and cook on very low heat for about 20/25 minutes. After about 20 minutes, pass the spatula around the edge of the skillet and flip it using the lid. Put it back in

  • continue cooking for another 10 minutes.
